Calrossy’s Year 12 Hospitality students recently delighted guests with a beautifully presented three-course luncheon — a showcase of the skills, confidence, and professionalism they have developed throughout their Certificate II in Cookery (VET) program.

Held on campus and attended by staff, family and special guests, the event was a celebration of the students’ two-year learning journey in the kitchen and beyond.

Each student designed and prepared a unique menu, demonstrating their talents in food preparation, plating, timing, teamwork, and front-of-house service.

Rather than a formal assessment, this showcase provided an opportunity for our students to express their creativity, share their achievements, and enjoy the rewarding experience of hosting a full dining event from start to finish.

Caitlyn's Menu:

Entrée: Pork and chive soup dumplings with an Asian-style dipping sauce

Main: Moroccan grilled chicken served with mango and feta salad, pumpkin seeds, and a balsamic glaze

Dessert: Vanilla crème brûlée with fresh berries

Shakaya's Menu:

Entrée: Rosemary, feta, and cherry tomato focaccia with garlic butter

Main: Pan-seared scotch fillet steak with mash, steamed vegetables, herb-infused olive oil, and a side of Diane sauce

Dessert: Apple crumble cheesecake with vanilla ice cream and salted caramel sauce

Maddison's Menu:

Entrée: Slow-roasted cherry tomato bruschetta

Main: Braised lamb shank in beef stock and brown sugar, served with honey-glazed carrots, creamy mash, and roasted cauliflower

Dessert: Roasted white chocolate caramel toffee meringue tart with dark chocolate ice cream

Charlie's Menu:

Entrée: Carrot and halloumi bites with mango salsa

Main: Lamb chops with rosemary and blueberry sauce, served with mixed roasted vegetables

Dessert: Passionfruit, chocolate, and coconut roulade

Guests were also treated to refreshing drinks hand-crafted by the students, including strawberry and mint lemonade, a blueberry and cranberry frozen frappe, the Pink Hogster — a vibrant and fruity blend of orange, pineapple, grenadine, and lemonade and the Sunrise - a layered citrus drink of orange juice, lemonade, and grenadine, beautifully presented in a sunset-style gradient.

The luncheon was met with glowing praise from staff and guests, who applauded not only the delicious dishes but also the professionalism, presentation and genuine hospitality shown by our students. It was a proud and memorable moment, marking a significant milestone in their VET journey.
